Follow up inspection:
-Previously affected areas were cleaned to remove small amount of rodent droppings.
-Food premises was maintained in a clean condition.
-Wooden shelving unit previously observed near the backdoor was replaced with a metal wire shelving unit.
-Digital probe thermometer was available on-site to monitor internal food temperatures during the various processes: cooking (74 degrees C or hotter), hot-holding (60 degrees C or hotter), cooling (rapidly from 60 to 20 deg C within 2 hours and 20 to 4 degrees C within 4 hours), and reheating (74 degrees C or hotter).
-Manager was aware to monitor refrigeration temperatures regularly.
-Cardboard liners were removed. Three shelving units were observed to be lined with washable shelf liners.
