Observation (CORRECTED DURING INSPECTION): A large container of cooked yellow fish at room temperature. Operator indicates it is taken out for lunch/dinner rushes and any leftovers are put back in the fridge
Corrective Action(s): Discarded the cooked yellow fish.

Only take out SMALL PORTIONS that will be used up for the rush hours. Any leftovers must be discarded, do not place back in the fridge.

Observation (CORRECTED DURING INSPECTION): Back handwash sink next to wok station cooking line has no paper towels in the dispenser

-Cooling cooked chicken atop the freezer in pans not covered
-Open can of tomato paste stored in fridge

-when cooling foods in shallow pans cover the foods with food wrap and leave a small gap for the steam to release
-Open food cans are to be emptied out and not stored inside
