Use pasteurized eggs to prepare hollandaise and caesar dressing.
Do not pool eggs in advance of service. Use pasteurized eggs or break eggs to order.
The thermometer in the undercounter reach in fridge is faulty. Was showing -3C but actual temperature was about 3C.
General sanitation is good.
Temperature of refrigeration units are satisfactory. Thermometers are available and daily temperature recording is done.
Sanitizer is detected in the dishwasher.
