Note: Hot water at knee activated hand wash stations in the deli, rotisserie chicken and meat processing areas is very hot (53C measured at a hand wash station in the meat processing area) which can make washing hands difficult, especially where the levers for hot and cold water are separate. Recommend installing/adjusting mixing valves to moderate the temperature of hot water to make it more comfortable thereby encouraging staff to wash their hands.

√ Cooling reviewed for chicken breasts used in various deli products, blast chiller used in deli, no concerns with process noted
