- Sushi product cooler at sushi prepline has ice packs to supplement cooling. Ensure perishables maintained at 4C and colder. Observed at 6C
- Handwashing sink requires paper towel and liquid soap dispenser. Liquid soap and paper towel available
- Dishwasher final disinfecting rinse +71C
- Under counter and walk-in and chest cooler at 4C and colder
- Freezers are below -18C
