Routine Inspection:
Handwashing station equipped with liquid soap, paper towels and warm water. Operator to confirm if water temperature is pre-mixed with hot/cold water.
The following temperatures met health requirements:
- Cooler = 2.3 degrees Celsius.
- Freezer = -19.2 degrees Celsius.
- Hot holding for pasta maintained above 60 degrees Celsius.
2-compartment dishwashing sink equipped with hot/cold running water.
High temperature dishwasher sanitizing with 75.3 degrees Celsius at the dish level after the final rinse cycle.
2-compartment prep sink equipped with hot/cold running water.
Proper thawing method observed - packaged food immersed in cold water.
General cleanliness satisfactory. Cook informed the ventilation canopy is due for cleaning this week.
Premises well lit.
No signs of pest activity at the time of inspection.
