Observation (CORRECTED DURING INSPECTION): Boxes of alfafa sprouts stored in box under neath cooler, unrefrigerated at 17C. Raw packaged meat stored at 6-7C.
Corrective Action(s): Sprouts discarded. Ensure to keep alfafa sprouts at 4C or colder. Temperature for raw meat cooler turned down and temperature dropped to 4C.

302 - Equipment/utensils/food contact surfaces not properly washed and sanitized [s. 17(2)]
Observation (CORRECTED DURING INSPECTION): Only bleach sanitizer in processing area was a red tray used to soak cleaned knives. Wet wiping clothes with raw meat still observed to be stored on cutting boards. No sanitizer being used by staff.
Corrective Action(s): Demonstrated to operator and staff how to mix 100ppm. Use on cutting board, knives and all food contact surfaces. Sanitizer must be changed multiple times daily as advised.

Observation: Several items placed directly on floor (e.g. oil, pasta, yogurt drink, avocado, kiwi and produce in walk-in cooler).
Corrective Action(s): All food must be stored 6 inches off the floor.

Observation: Raw chicken juice noted on tray where bagged and boxes of chicken are refrigerated (open display and glass cooler).
Corrective Action(s): Clean up spill immeidately. Rebag the chicken so the outside of the bag is not contaminated with raw chicken juice.

Observation: Duct tape used on knife handle part. Cardboard used as splash board/guard in raw meat station. Cardboards used to line flooring.
Corrective Action(s): Remove duct tape and cardboard forewith as they are not cleanable material. Replace knife with proper working handle, rubber floor mats and washable splash board such as stainless steel so the surface is smooth, non absorbent and cleanable.
