- Ensure wiping clothes are stored in sanitizing bucket with 200ppm of Quats or 100-200ppm of chlorine solution (1 tsp of bleach with 1 L of water)
- Hot holding of soups at >60C
- All coolers at <4C (including walk-in cooler, under the counter cooler, preparation coolers and inserts, front 2-doors upright cooler, front display cooler)
- All freezers at < -18C (including walk-in freezer, front upright baked goods freezer). Shelled eggs stored at the lower shelves.
- Dry storage area in sanitary condition with no signs of pests at time of inspection. Dry goods stored in pest proof bins.
- Pest monitoring in place.
- Meat slicers cleaned-in-place in sanitary condition
- Ice machine is in sanitary condition and scoops stored outside.
- Handwash stations equipped with hot/cold running water, liquid soap, and single-use paper towels. Proper handwashing techniques were observed.
- Backdoor equipped with screen door. Door was closed at time of inspection.
- High temperature dishwasher with 76.9C measured at the plate.
- Labelled spray bottle with 200ppm Quats.
- Hood exhaust canopy in sanitary conditions.
