Observation (CORRECTED DURING INSPECTION): Metal utensil in the drawer at the juice station (across from sandwich prep) was put away without cleaning.
Corrective Action(s): This item has been removed and will be washed and sanitized in dishwasher.
Also, clean and sanitize the drawer and shelves in this area on a routine basis.

Routine inspection of main kitchen:
Coolers are at 4C / 40F or colder.
Designated hand washing sinks have liquid soap and paper towels. (Note: the paper towel dispenser in the plating area is becoming rusted and is difficult to use).
Temperature records are being kept for carts. Alcohol swabs available to sanitize probe thermometers.
Quats sanitizer 200ppm is available to sanitize surfaces.
Chlorine sanitizer in spray bottle in dessert prep area is at 0 ppm and has been removed as quats sanitizer is used by staff.
Dishwasher has a hot water sanitizing rinse (>71 C/160F at the plate; >180F at the gauge; temperature records are being kept using temperature stick).
Manual hot water sanitizing rinse is >180F (82C).
The cart washing room has been renovated.
Walk in cooler #4 - ceiling and fans are clean. Renovations to the floor are pending.
