Observation (CORRECTED DURING INSPECTION): Hot-held food items at approximately 50-55C.
Corrective Action(s): Top up water level in hot-holder. Food items reheated to 74C and hot-held at 60C or greater. Ensure that food is always kept at less than 4C or greater than 60C to prevent growth of bacteria that could cause foodborne illness.

Observation: Prep cooler is still at 10C. Technician who came states that he lacks the proper equipment to replace the refrigerant. There is currently no food in the main prep cooler - all sandwich ingredients are stored inside the smaller prep cooler.
Corrective Action(s): Repair the prep cooler by Friday the latest. Any further delays may result in further enforcement, including correction orders.

- Display cooler is now at 2C. You may now store potentially hazardous foods including soups inside the display cooler
- Follow-up inspection to take place on Friday, Aug 24 to ensure that the main sandwich prep cooler has been serviced
