Observation (CORRECTED DURING INSPECTION): 1. Observed food containers in the walk-in cooler lacking proper covers to protect food from contamination
2. Garbage bag was being used to store noodles in the walk-in cooler
3. Prep sink was being used to marinate meat products
Corrective Action(s): 1. Required operator cover all products in the cooler to protect it from contamination
2. Required operator to remove garbage bag and NOT TO USE garbage bag to store food. Food discarded at the time of inspection
3. Required to remove meat from the sink and use a proper clean and sanitized container to marinate meat products. Operator removed the meat, cleaned and sanitized the sink at the time of inspection.

Hot and cold running water available at all sinks
All coolers are at 4 C or lower
All freezers are at -18 C or lower
Walk-in cooler at 4 C or lower; organization is good
All hot holding units at 60 C or higher
Observed employee washing hands properly
Low-temperature dishwasher in good working order; detected 100 ppm of chlorine residual
Bleach sanitizer on site, wiping cloth was in the bucket of sanitizer; staff responded appropriately when asked about cleaning and sanitizing procedures
**Food stored at room temperature in small batches; measured temperature to be at 4 C - 8 C. Small batches are taken out during busy times and all used up within 1-1.5 hr** Ensure to monitor the time and have food put back into cooler and/or discarded after 2 hrs
