Coolers are at 4C/40F or colder. Temperature records are kept.
Freezer is at -9F (below 0F).
No hot holding during inspection. Food is reheated to order.
Thawing frozen food at 4C or colder.
Hand washing sink has hot/cold water, liquid soap, and paper towels in dispensers.
Milk steaming pitchers are cleaned and sanitized every 4 hours.
Whipped cream - new whipped cream is in new, clean dispenser.
Quats sanitizer - wiping cloths stored in 200ppm quats sanitizer (label indicates 200ppm required/ temperature about 24C).
Commercial dishwasher has a hot water final sanitizing rinse (82C at final rinse water temperature gauge and 71C+ measured inside of machine - good).
Dishwasher final rinse temp recorded.
