202 - Food not processed in a manner that makes it safe to eat [s. 14(1)]
Observation (CORRECTED DURING INSPECTION): Observed a large stack (approxametly 20-30) of cooked chicken thighs next to the grill, internal temperature was 29C.
Corrective Action(s): Reviewed proper cooling proceedures with owner including spreading out cooked food so it is in a thin layer (maxiumum 2 inches deep) so that it can cool quickly (to less than 4C within 6 hours).

205 - Cold potentially hazardous food stored/displayed above 4 °C. [s. 14(2)]
Observation (CORRECTED DURING INSPECTION): Raw bean sprouts found stored at room temperature, no time stamp present, and internal temperature measured 19C. No customers in restaurant at time of inspection and no orders being filled/made.
Corrective Action(s): Sprouts voluntarily discarded. Follow time stamping system as previously discussed or ensure these stay 4C or less at all times by keeping it in the cooler or completely covered/submerged in ice.

302 - Equipment/utensils/food contact surfaces not properly washed and sanitized [s. 17(2)]
Observation (CORRECTED DURING INSPECTION): Bleach sanitizer bottle had no detectable sanitizer in it. Owner remade a bottle of sanitizer but made it too strong (bleached out test strip).
Corrective Action(s): Use only 1 teaspoon of bleach mixed with 1 litre of water. A proper bleach solution was made during inspection. Use this on all food contact surfaces that are used within two hours of first use.

Observation (CORRECTED DURING INSPECTION): Box of raw ground pork observed stored at room temperature. Box stated "keep frozen" but the contents of the box were fully thawed but still cool to the touch.
Corrective Action(s): Frozen food must be thawed in the cooler over night or in cold water. Storing it at room temperature is not acceptable.

Observation: Large build up of grease observed between and behind the deep fryers. *This is a repeat infraction*
