Observation:
Peeling paint observed on the ceiling and on the wall in the sausage making area. The paint could fall into foods, and the exposed ceiling & wall can not be properly cleaned.
Corrective Action(s):
Scrape off the peeling and chipped paint, and reseal or repaint the surfaces so that it is smooth, level, sealed, durable, and cleanable.

Comments

A routine inspection was conducted, the following observations were made:
Processing Plant
- Coolers 4C or colder; freezers -19C or colder; thermometers present; and temperatures recorded daily.
- Hand sinks stocked with liquid soap, paper towels, and running hot and cold water.
- High temperature dishwasher rinse cycle was above 71C at the plate's surface, as per Thermolabel.
- Chlorine based sanitizer used on surfaces.
- All foods stored in food grade containers; covered; date coded; labeled; and stored 6" off the floor on pallets, racks or shelves.
- General sanitation level is good.
- No signs of pests. Abell Pest control is contracted to monitor for pests every 2nd month. Reviewed reports and all in order.
- No expired foods in use. FIFO rules being followed.

Retail Area
- Coolers 4C or colder; freezers -19C or colder; thermometers present; and temperatures recorded daily.
- General sanitation level is good. No signs of pests.
- No expired foods for sale.
