Freezers are at < - 18 C.
Eggs - store below bread.
Hot holding (chicken wings, hot dog, taquito rolls) are all above 60 C/ 140 F. Hot holding times are also monitored - good.
Temperature logs are being kept - good!
Food temperatures - probe thermometer is sanitized before use - good.
Hand washing sinks for staff (by coffee and in hot holding area) have liquid soap and paper towels, in dispensers.
Quats sanitizer in a labelled spray bottle is used to sanitize counters.
Triple sink at back clean up area is used to wash, rinse, and sanitize utensils. Quats sanitizer is being dispensed at 200ppm - good.
Single service utensils (plates, cups, etc.) are used for the customers. Take out facility but washrooms for customers are available.
