Observation: High temperature dishwasher was unable to achieve the minimum sanitizing temperature of 71 degrees C at the utensil surface at time of inspection (66 to 69 degrees C achieved after at least three cycles).
Corrective Action(s): Ensure high temperature is able to achieve at least 71 degrees C at the utensil surface for effective sanitizing. A 100 ppm chlorine sanitizing step is to be used after dishes/utensils have been washed in the dishwasher.

Routine inspection conducted:

- Coolers at 4 degrees C or less
- Freezers at -18 degrees C or less
- Hot holding internal temperatures at 60 degrees C or more
- Wiping cloths stored in bleach water solution at 200 ppm chlorine
- Hand washing stations (front, back) supplied with hot and cold running water, liquid hand soap, and single use paper towels.
- Ice machine and ice bin maintained in clean condition. Scoops stored safely.
- No evidence of pest activity noted. Premises is serviced on a monthly basis by a professional pest control operator.
- Temperature records are maintained and available for review. Dishwasher logs are maintained.
- FOODSAFE requirements met at time of inspection
*Reminder: As of July 29, 2013, FOODSAFE Level 1 certificates issued in BC will expire after 5 years. Existing FOODSAFE Level 1 certificates are valid until July 29, 2018.
