Corrective Action(s): Clean up droppings and disinfect floor area. Continue to monitor for any further activity and retain Pest Control services if further activity noted. Adhesive traps present. Cleaning was completed at the time of the inspection.

-General sanitation of the premises was satisfactory.
-Handsinks were supplied with liquid soap and paper towel
-Coolers were 4C and colder
-Foods stored in coolers is wrapped in food grade wrap or covered to prevent contamination. Raw meat is stored at the bottom of the cooler.
-Product in soft serve machine was 3C
-Freezer was -16C
-Cooked rice in rice cooker was 64C. Cooked meats in steam table were 62C - 65C. (Minimum hot holding temperature is 60C)
-Bleach sanitizer used to sanitize food contact surfaces and dishes. Wiping cloths stored in sanitizer solution (100-200ppm). Sanitizer solution also present in spray bottle (200ppm chlorine)
-Stera sheen present to clean and sanitize soft serve machine. Operator reported machine is cleaned and sanitized twice per week.
