Corrective Action(s): Have tap repaired by Wednesday this week (22nd June 2016). Call area inspector for reinspection once fixed - card provided.

Comments

*General sanitation satisfactory. No pest issues observed during inspection.
*Meat slicer, knives and other utensils stored in clean condition.
*All hand sinks functional and equipped with warm water, liquid soap and paper towels (including customer and staff washrooms).
*Hollandaise sauce warmer was at or above 60 C.
*All cooler and freezer temperatures satisfactory. Note: the second glass door cooler from the right in the back area had a thermometer that appeared to be reading 2 - 4 degrees too cold - ensure this is adjusted or replaced.
*Quats sanitizer available at 200ppm in spray bottles.
*Eggs for the cook line are brought out and kept in small buckets on ice - ensure ice comes up sides of bucket, or bring out smaller numbers of eggs.
*Low-temperature dishwasher rinse contained 100ppm chlorine sanitizer.
*Organization of raw and ready-to-eat foods satisfactory. Dry storage area maintained in tidy condition. All food stored off floor.
*Ice machine internals could not be checked during inspection - ensure unit is cleaned and sanitized regularly, according to manufacturer's specifications.
