Coolers (display, undercounter, & counter-top) at < or = to 4 C. Freezers (display, ice, ice-cream, undercounter, & bulk storage) at < or = to -18 C. Thermometers for cold units - available. Hot holding units at > or = 60 C. Insert thermometers - available. All food is covered and stored safely. Pastry cabinet kept in sanitary condition. The handles of the tongs were not touching the food items. Three compartment sink available for manual dishwashing. Sanitizer available/Quat solution at 200 ppm. Surface sanitizer - available.
