Observation (CORRECTED DURING INSPECTION): When asked for sanitizer solution staff were not able to provide sanitizer solution.
Sanitizer solution was later found to be already made on shelf in food preparation area.

Observation: Some cleaning required.
Food debris observed under grill, on upper exhaust canopy and some splattered on walls/backsplash throughout.

Corrective Action(s): Cleaning began upon arrival of EHO.
Cleaning has improved since previous inspection. Area behind barbecue is much cleaner! -WELL DONE.
Remove all supplements/drugs from back food preparation area and have staff store these items in staff storage area away from food.

308 - Equipment/utensils/food contact surfaces are not in good working order [s. 16(b)]
Observation: Lower shelf of under counter cooler has paint worn away which is exposing wet wood underneath. Raw wood is not an acceptable material as it can not be cleaned properly and is absorbent.

Corrective Action(s): Repaint lower shelf of under counter cooler unit.
Owner and EHO discussed other methods. Do not use staples to cover shelf as staples can end up in food and become a choking or physical hazard to patrons if ingested.

- Hot Holding achieving temperatures of greater than or equal to 60 degrees Celsius
- Dishwasher achieving final sanitizing rinse of greater than or equal to 50 ppm chlorine at the dish
- Sanitizer solution in use throughout food preparation areas and at concentrations of greater than or equal to 200ppm Chlorine
- Test strips available for use observed
- Raw meat stored away from Ready to Eat food items
- All food items covered in cooler and freezer units
- Receipts available for inspection - Pork Blood receipts located and from approved source
- Back door closed during inspection - fully screened
- Light covers in place
- Cooler handles and seals in good sanitary condition
- Meat grinder in good sanitary condition - EXCELLENT WORK!
- All containers used to store lids/utensils/etc. in good sanitary condition
- Staff Personal items kept separate from kitchen equipment - front serving station has been organized. Removal of personal items has occurred - EXCELLENT WORK!
- FoodSafe Certified staff present during inspection
- Scallop shells are being used one time only for food presentation and then discarded - no evidence of reuse of shells between patrons and discussed with Owner to confirm this is not occurring - WELL DONE!

*** Follow up to occur September 07 to ensure cooler unit has been repainted on lower shelf
