Corrective Action(s): Provide sanitizer in bucket for storing wiping cloths. Mix solution of sanitizer to ensure proper sanitizing of food contact surfaces.

Observation (CORRECTED DURING INSPECTION): Items were stored in and on top of the hand wash station.
Corrective Action(s): Do not block access to hand wash station. Remove all items that are blocking hand sink.

Observation (CORRECTED DURING INSPECTION): Some containers of raw meat were stored on top shelves in coolers.
Corrective Action(s): Raw meats must be stored below salads and other ready to eat items.

306 - Food premises not maintained in a sanitary condition [s. 17(1)]
Observation: Debris build up underneath prep tables and equipment in the kitchen area. Walls and shelves also have stains and debris.
Corrective Action(s): Clean thoroughly underneath equipment as well as walls and shelves. Pay attention also when cleaning the dishwashing area.

Comments

Health permit posted in plain public view.
Hand wash stations equipped with liquid soap and paper towels.
Bleach sanitizer measured 100 ppm or greater.
Freezers were at -18 deg C or colder.
Prep line coolers were at 3-7 deg C. Monitor coolers closely and ensure to close the lids of prep line coolers when not in use.
Sushi display cooler was at 2-3 deg C.
High temp dishwasher reached 71 deg C at plate surface.

Note: Future renovations to add more storage space in the kitchen.
Operator to let EHO know when this will be happening.
