Observation: The meat slicer (used for cheese) in the deli station has debris stuck-on behind the blade and up-top.

Corrective Action(s): Clean the meat slicer thoroughly. Slicers should be cleaned at minimum every 4 hours with sanitizer. Take a picture of the cleaned meat slicer and send to the inspector via e-mail no later than by 9am tomorrow

Quats sanitizer at 200 ppm; Onisan available in meat butchering room; shelving units for raw meat are routinely pressure-washed
Meat butchering room at </= 10C
All coolers at </=4 C; all freezers at </= - 18C
Three-compartment sink in meat butchering room; correct procedure followed (soap and warm water, rinse, sanitizer, air dry)
UV traps in-operation; no signs of pests observed
Overall sanitation is good *Some cleaning is needed in the veggie walk-in cooler underneath the shelving units. A build-up of debris was observed underneath all of them
The weather-stripping is in disrepair in the veggie prep room (?) next to the veggie walk-in cooler. Staff were aware and said that a new weather-strip has been ordered.
No concerns noted with staff hygiene
