Observation (CORRECTED DURING INSPECTION): Mini domestic black cooler is measured to be 13.1oC (air temperature). Foods are transported from 2-door sliding cooler in the morning, then placed in black cooler. When customers order staff will take food out from cooler, prepare it, then place it back to cooler. Food temperature (meat mixture) is measured to be 9.9oC.
Corrective Action(s): Do not store any potentially hazardous foods in this cooler until temperature is maintained at 4oC or less. Foods in this cooler discarded.

302 - Equipment/utensils/food contact surfaces not properly washed and sanitized [s. 17(2)]
Observation (CORRECTED DURING INSPECTION): 1. Bleach sanitizer used indicated rinse thoroughly after use. In addition, 0ppm chlorine is noted in sanitizer buckets.
2. Dishwasher final rinse had 0ppm chlorine on plate. A new jug was changed but it took 10+ runs to achieve at least 50ppm chlorine on plate.
Corrective Action(s): 1. Operator purchased new bleach sanitizer at time of visit. New sanitizer bucket was made and at least 100ppm chlroine is now noted.
2. Do not use sanitizer in jug until empty. Change at 25%.

Observation: Open bags of flour is noted in hallway dry storage area.
Corrective Action(s): Once opened, place dry goods in pest proof containers.

Observation: Mice droppings are noted in faciltiy - under dumpling making area, next to dough mixer, beside single door freezer at the back kitchen, and behind 2-door prep cooler. Facility has no contract with any pest control company.
Corrective Action(s): Remove droppings, sanitize areas, and contact pest control company. A regular visit should be made with a pest control company.
