Observation: Several cardboard boxes were observed in the dry storage area near raw onions and in the washroom. Extra jars and a container of bread to be placed into the compost bin was also present on-site.
Corrective Action(s): Remove the extra cardboard boxes, the jars, and the extra bread from the cafe by tomorrow. Clean the shelves and re-organize the dry storage area to separate food from non-food items.

Observation (CORRECTED DURING INSPECTION): Empty egg cartons were being reused to line surfaces.
Corrective Action(s): Do not use egg cartons to line surfaces since they are not made of easy to clean and durable materials. The egg cartons were removed from equipment storage areas.

Observation (CORRECTED DURING INSPECTION): Detergent and chemicals in spray bottles were observed stored near oil in a sealed container and near a dry storage area.
Corrective Action(s): Ensure all cleaning chemicals are stored separately from food storage, equipment storage, and take-out container storage areas. The operator moved the cleaning chemicals to the cabinet below the handwashing station.

Liquid soap, hot and cold running water, and paper towels were available at the handwashing station in the kitchen, staff washroom, and customer washrooms.
Coolers were 4 degrees C (40 degrees F) or less and were equipped with thermometers.
Chest freezers were -18 degrees C (0 degrees F) or less.
Hot-held soup and rice was 60 degrees C (140 degrees F) or hotter internally.
Food was stored in food grade packaging inside the chest freezers.
100 ppm chlorine sanitizer was available in the bucket.
Dishwasher final rinse was 71 degrees C or hotter internally at the plate.
