Observation (CORRECTED DURING INSPECTION): A large pot of pakora was observed cooling at room temperature under a fan. Internal food product temperature measured at 40C. Chef stated the pakora was cooked 30 minutes ago.
Corrective Action(s): Large pot is not suffcient to cool food in a safe manner. Hot food must be cooled from 60C to 20C in 2 hours and 20C to 4C in 4 hours. Divide the pakora into small containers to facilitate the cooling process. Correct by: Immediately.

Observation: 1. Mildew observed on the inside of the ice machine.
2. Four knvies were stored in the crack between the wall and shelving board.
Corrective Action(s): 1.Clean and sanitize the ice machine. Discard the current batch of ice and the first batch after sanitizing the machine. Ice machine must be cleaned at least every week. Correct by: Immediately.
2. Do not store knives in between cracks. Clean and sanitize the aformentioned knives. Knvies must be stored in a food grade container or proper food-grade knife rack.

Observation: Garbage bag was used to cover the dough roller. This is a repeated violation.
Corrective Action(s): Do not use garbage bag to cover any food items or equipment. Garbage bag was not made from food-grade material and can contaminate food. Clean and sanitize the dough roller. Correct by: Immediately.

Observation: Rodent droppings observed at the following areas:
1. Around the base board inside the dry storage room with the dough mixer.
2. Around the base board inside the dry storage room near the washroom.
Corrective Action(s): Clean up the rodent droppings from the aforementioned areas and continue to monitor the activities. Food must be stored in tight sealed containers to protect them from pests. Contact the professional pest control operator and follow their recommendations on remediation.
