Observation (CORRECTED DURING INSPECTION): Low temp mechanical dishwasher used for warewashing recorded at 0ppm chlorine residual during rinse cyle which may result in inadequate sanitizing of dishes/utensils. Operator serviced the dishwasher during inspection.
Corrective Action(s): Please ensure that all dishes/utensils/food contact surfaces are adequately washed and sanitized.

Observation (CORRECTED DURING INSPECTION): Low temp mechanical dishwasher was run multiple times and 0ppm chlorine residual recorded during rinse cycle. Operator was aware of low level of chlorine solution in sanitizer bottle and replaced bottle with new one during inspection. After priming the dishwasher, the concentration of chlorine residual was measured at 50ppm.

Routine inspection conducted.

Findings:
- Temperature of front prep cooler and undercounter cooler below 4C
- Small cooler in the front at 1.2C
- Walk in cooler at 3.8C
- Stainless steel freezer at -19C
- Handwash sink in the front and back area had adequate supply of hot and cold running water, liquid soap and single use paper towels.
- 3 compartment dishwashing sink available.
- 200ppm QUATS concentration recorded at dispensing unit. Spray bottles were refilled at the time of inspection.
- Food storage practices were satisfactory.
- All food products were stored at least 6inches off ground.
- Walk in cooler was very well organized.
- Operator has valid FoodSafe Level 1 certificate (Exp Jan 23, 2027).
- Overall, the facility was maintained in excellent sanitary condition.
