Observation (CORRECTED DURING INSPECTION): 1) No bleach water available for sanitizing. Always have bleach water prepared.
2) Dishwasher reached 69.3*C at plate level - must reach at least 71*C. No re-usable customer dishes may be used until it is repaired.
3) Spray used for customer tables has no sanitizer. Use a sanitizer for customer tables - 1 tsp bleach per liter of water.
