Observation:
1.) Meat derbis was observed on the meat slicer.
2.) Filth accumulation was observed in both ice machine at the back of house.
Corrective Action(s):
1.) Disassemble meat slicer and clean and sanitize (Correted during inspection)
2.) Turn off the ice machine, empty all ice out, and clean and sanitize areas with filth accumulation.(Date to be corrected: May 4th, 2023)

302 - Equipment/utensils/food contact surfaces not properly washed and sanitized [s. 17(2)]
Observation:
1.) Dried up meat derbis was observed on the meat slicer.
2.) No iodine detected from the rinse water in the glasswasher at the bar station.
3.) 2 QUAT sanitizer spray bottle had no detectable QUATs (0 ppm) in front of house and back of house.
Corrective Action(s):
1.) Disassemble and clean and sanitize the meat slicer. (Corrected during the inspection)
2.) Replenish sanitizer spray bottles with fresh QUATs. (Corrected during the inspection)
3.) Wash all glasswares in the low-temperature dishwasher until the glasswashers repaired (Date to be corrected: May 4th, 2023)

Observation (CORRECTED DURING INSPECTION):
1.) No paper towels in the handsink station near the cook line (left side).
2.) Handsink at the bar station (right side) was obstructed with trays.
Corrective Action(s):
1.) Supply paper towel on the handsink noted above. Ensure all handsink stations are adequately supplied with paper towels, liquid hand soap,and running hot&cold water at all times.
2.) Remove the trays to make the handsink accessible. Ensure all handsink stations are not obstructed at all times.

Staff water bottle was observed in direct contact with tofu inside the prep cooler in front of house

Observation:
Mouse droppings were observed at the bottom of the shelves and corner of the room in the storage area outside the restaurant.
**Notes: Recent pest control report (April 5th, 2023) noted mice activity at the bar station. Ensure to follow pest control company's recommendations regarding general sanitation of the premises.
Corrective Action(s):
Clean and sanitize droppings in the area noted above. (May 9th, 2023)

Observation:
Storage area outside the restaurant had significant clutter and items were stored on the ground. Severe filth accumulation was observed underneath the two upright 2-door freezers.
Corrective Action(s):
Clean the area and organize all items; ensure to keep all items at least 6 inches above the ground to aid in cleaning and pest monitoring. (Date to be corrected: May 19th, 2023)

308 - Equipment/utensils/food contact surfaces are not in good working order [s. 16(b)]
Observation:
1.) QUAT dispenser at the 2 compartment sink measured 0 ppm.
2.) Glasswasher had no detectable iodine residue on the glass surface (0 ppm).
3.) Liquid soap dispenser in the handsink at the bar station (right side) was not working.
Corrective Action(s):
1-3) Repair all the equipment noted above. (Date to be corrected: May 4th, 2023)

Comments

- All handsink stations were fully equipped with liquid hand soap, paper towels, and running hot and cold water except for the hand sink station noted in the violation above.
- General sanitation was satisfactory.
- Vents/exhaust canopy over the cook line had no grease accumulation.
- Low-temperature dishwasher had a chlorine residue of 50 ppm at the plate surface.
- Most QUAT spray sanitizer and all sanitizer buckets measured 200 ppm except on the spray bottles noted in the violations above. Recommend to check the sanitizer concentration regularly to ensure sanitizer concentration is correct.
- Food dry storage area has adequate space, shelves, cabinets.
- Receiving area appear to be in clean condition.

Temperature control:
- All coolers less than or equal to 4C.
- All freezers measured -18C to -29C
- Rice in rice cooker measured 64 C
- Gravy at the hot holding-unit measured 65 C
- All other hot holding unit measure at or above 60C
- Daily temperature log maintained and up to date. Ensure to log all temperature in Celsius or Fahrenheit for consistency.

Bar station:
- All coolers measured at or below 4C.
- Handsinks were fully equipped with liquid hand soap, paper towels, and running hot and cold water.

FOODSAFE certified staff was available during the inspection.

Pest control report was provided and last inspection was done on April 5th, 2023.

Permit was posted in a conspicuous location.

**Notes:
1.) Add Fraser Health Advisory regarding the risk of consumption of raw oyster.
2.) Keep shellfish tags in file at least 90 days.
