Observation: Mould on under counter freezer door - open packages of french fries and chicken wings below.
Corrective Action(s): Freezer needs to be cleaned and sanitized to remove mould, any potentially contaminated food is to be discarded.
Open packages of food must be kept in food grade containers with tight fitting lids in place to prevent either physical or microbial contamination of food.

Observation: .
- Mould in condiments cooler door seals, food debris on back wall and inside top of cooler and condiments cover
- outside of dishwasher splattered with food waste, dirty dishware on both the clean and dirty side of the dishwasher
- staff washroom toilet splattered with urine and mould in toilet bowl, hand sink in staff washroom has dried on dirt in bowl and on the rim of the sink,
- walls in back prep and dish washing area have food splatters throughout
Corrective Action(s): Premises and equipment needs a thorough general cleaning and sanitizing to remove mould and food splatters.
"Clean" side of dishwasher must be thoroughly cleaned and sanitized before placing any sanitized dishware on that side. Ensure staff are aware that dirty dishware must not be placed on the clean side because of the potential for the just sanitized dishware to become contaminated.

Observation: Employee working alone does not have FOODSAFE; Manager is on-site only intermittently between deliveries.
