301 - Equipment/utensils/food contact surfaces not maintained in sanitary condition [s. 17(1)] Observation (CORRECTED DURING INSPECTION): Observed a cup of water (~20C) storing an in-use stirring spoon. The stirring spoon and cup were removed to be washed and sanitized. Ensure in-use stirring spoons are stored in a cup of ice or an empty clean container. Corrective Action(s): Violation Score: 5 302 - Equipment/utensils/food contact surfaces not properly washed and sanitized [s. 17(2)] Observation (CORRECTED DURING INSPECTION): Observed a spongy non-slip material lining the 2 compartment sink's drain board which was water logged at this time. This is used to prevent items from sliding around. Operator cited that this is cleaned once a day at the end of the day. Operator is to wash and sanitize the lining materials every 4 hours or come up with another options. Operator discarded the lining material at this time. Corrective Action(s): Violation Score: 5

Corrective Action(s): Violation Score: 1 209 - Food not protected from contamination [s. 12(a)] Observation (CORRECTED DURING INSPECTION): Ice in the ice machine was exposed to the environment as the ice machine sliding door was detached from the unit. Ice appears to be free of contamination at this time. The operator reattached the door to provide a cover at this time. Corrective Action(s): Violation Score: 3 306 - Food premises not maintained in a sanitary condition [s. 17(1)] Observation: Observed a small amount of coffee beans spilled by the floor next to the Merrychef oven. Corrective Action(s): Clean and sanitize the aforementioned area. Correct this by: immediately. Violation Score: 3 308 - Equipment/utensils/food contact surfaces are not in good working order [s. 16(b)] Observation: 1. (Corrected During Inspection) The ice machine's sliding door was detached from the unit at this time. Operator cited that the work order is in place to fix the door. The operator reattached the door at this time. 2. Drain plugs not available for 2 compartment sink - manual dishwashing. Corrective Action(s): 2. Acquire drain plugs for 2 compartment sink. Routine inspection conducted: Hand washing stations fully equipped with hot and cold running water, liquid soap and paper towels. All coolers measured at 4C or less. All freezers measured at -18C or less. QUATS sanitizer measured at 200 ppm as per test strips. High temperature dishwasher's sanitizing cycle measured at 72C at the plate level. No sign of recent pest activity noted at this time. Customer washrooms in sanitary condition and fully equipped. Signature not collected due to COVID 19.
