Observation (CORRECTED DURING INSPECTION): 1) small container of garlic oil left at room temperature. Garlic oil is left out all day and stored in cooler at end of night as per operator
2) Small container of noodles in water stored at room temperature.
3) Meat marinating in 3 door cooler @ 9 deg. C, seafood sauce @ 10 deg. C
4) beansprout in water @ 9.5 deg. C stored in insert of non functional prep cooler unit located next to ice machine
Corrective Action(s): 1) garlic oil was discarded. Garlic oil is a perishable and must be stored in a cooler at 4 deg. C or less.
2) container of noodles was relocated to the cooler. Do not leave perishables at room temperature. Unless used immediately/processed
3) relocate the above food items and all perishables to another cooler that is 4 deg. C or less
4) beansprout was water refilled with ice. No other perishables noted to be stored in prep cooler. In future inspections, should this cooler be stocked with perishables, this cooler needs to be repaired to ensure temperatures are <=4 deg. C. Operator to ensure bean sprouts are kept at 4 deg. C on ice. Add ice and change water more frequently on hot summer days.

Observation (CORRECTED DURING INSPECTION): -container of rock sugar and plastic bags was stored in kitchen handwash sink

Observation: 1) noted Cardboard used to line bottom shelf of kitchen prep table
2) noted several orange home depot pails/white pails stored next to upright freezer in back kitchen
Corrective Action(s): 1) remove the cardboard as this is not cleanable surface. Ensure shelfing is regularly cleaned.
2) remove the home depot orange pails/white pails. These containers are not designed to store food. Obtain food grade containers.

This inspection done by EHO student.
Notes
-all handsinks stocked with hot/cold water, soap, and paper towels (see violation code 401 RE: obstruction)
-sanitizer pail in kitchen line contain 200 ppm chlorine, towels were inside. Spray bottles @ 200 ppm chlorine
-all freezers are <=-18 deg. C
-no obvious signs of pests noted during inspection
-general sanitation is satisfactory
-Hi temperature dishwasher @ 71 deg. C on plate level (as per thermolabel)
-rice hot held @ 78 deg. C

*3 door cooler at start of inspection @ 10 deg. C near end of inspection, temperature of cooler @ 6.9 deg. C
Temperature appears to be dropping - may be in defrost mode. Relocate perishable foods to functional cooler and do not use unless able to ensure cooler is 4 deg. C or less.
Adjust/Repair/replace as needed. All other coolers are <=4 deg. C.

-ice machine appeared clean with scoop stored outside of the ice in a separate container.
-meat slicer appears to be cleaned during time of inspection.
