Comments

-Follow-up inspection to February 6, 2018.
-Handwash stations were easily accessible and supplied with hot and cold running water, liquid hand soap (not diluted with water), and single use paper towels.
-Facility is only storing a single insert of crab meat out during rush periods to make sushi. Additional inserts are stored in the glass door cooler at 4C.
-Did not observe any frozen potentially hazardous foods thawing at room temperature at the time of inspection.
-Did not observe operator preparing food on top of the chest freezer using a cutting board lined with cardboard at the time of inspection. All work surfaces must be smooth, non-absorbent, and easily cleanable.
-Bleach sanitizer pail and spray bottle in the front sushi area properly labelled. Bleach sanitizer pail in the kitchen was not labelled - container was labelled at the time of inspection. Ensure all chemicals are relabelled as needed once the label falls off/fades.
