Observation: Operator is making and bringing kimchi from home and selling them at the restaurant. This is unacceptable.
Corrective Action(s): Foods sold at the restaurant have to come from an approved source. Foods made at home cannot be sold at the restaurant. You are not permitted to make kimchi at the restaurant due to lack of space and poor sanitation practices. Kimchi must be purchased from an approved source. Keep up to date receipts to show as proof.

Observation: Ground meat was being stored on top of ready to eat meats or vegetables in the cooler and freezer. Bags of onions are stored directly on the floor.
Corrective Action(s): Always store raw meats below vegetables and other cooked foods. Store onions on pallets.

Corrective Action(s): Sweep the side storage area. Clean the cooler door handles. Ensure that dishes are washed properly. Do not hand wash dishes as discussed. Get another dishwasher rack (one with rungs that can be used to wash pans).
