Follow up inspection: - Utensils such as scoops and knives for dispensing desserts will be washed after each use. - The bottom drawer of the hot holding unit that was not working is being kept empty. - Some cleaning has been carried out. However, patches of stuck-on grime (up to 1/4in thick in areas) remains under the cooking equipment, corners...etc. Scape these off. - Repair the flooring in the dish pit area. Broken tiles and excessively worn grouts allow dirty water to pool and may contribute to pest problems.
