Observation (CORRECTED DURING INSPECTION): Sanitizer for 3-compartment sink was at 50 ppm QUATS. Staff claimed that they are pumping 1 pumps of Sanitizer Solution in the rinse sink. Teststrips used to verify sanitizer concentration was discoloured and unable to test sanitizer strength.

Corrective action:Ensure sanitizer for utensil Sanitation in 3-compartment sink maintained 200-400 ppm QUATS. Obtain valid teststrips to test the sanitizer strength

-Hot holding unit: chicken: 60 deg C
meat sauce: 60 deg C
-Drink cooler: 2 deg C
-Pepsi cooler in seating area was not in use due to Covid-19 Safety precautions
-Sanitizer spray bottle: 200 ppm QUATS
-All handwashing stations were fully supplied with hot & cold running water, liquid soap, paper towels.
-pest control serviced by ORKIN and comes in once a month
-Temperature log for hot holding and refrigeration units maintained in a daily basis and checked 4 times in a day

Recommmendation:
-maintain a sanitizer concentration log and check the sanitizer strength at least once a day
-Use stainless steel containers to store food in hot holding unit fo better heat conduction and maintain food at or above 60 deg C
