Observation: Inside walk in cooler, there is dirt/debris/black spots developing on the wooden walls and wooden ceiling.
Corrective Action(s): Scrape/remove this dirt. Wood may need to be refinished/resealed to prevent mould from occuring in the cooler from moisture.

Observation: Upright cooler in kitchen is not consistently at 4 deg C throughout. The left side of the cooler is at 6 deg C.

Handsink equipped with hot/cold running water, liquid soap and paper towels
Walk in cooler was at 3.1 deg C
Undercounter prep cooler: 1 deg C, inserts not in use at time of inspection
Salad dressings cooler in bar area at 3 deg C
Upright freezer: -12 deg C
No hot holding at time of inspection as restaurant had just opened
Fumehood ok
Bleach water sanitizer solution in rag bucket at 100 ppm chlorine residual
High temperature dishwasher achieved 78.7 deg C on rinse cycle-->any larger items must be washed/rinsed/sanitized in your 3 compartment sink if they do not fit in your dishwasher
No signs of pests at time of inspection
