Observation (CORRECTED DURING INSPECTION): Low-temperature dishwasher was not functioning at beginning of inspection. No chlorine residual dispensed.
Corrective Action(s): Stock bottle of chlorinated sanitizer has been changed. Ensure that you check your dishwasher at the beginning of each day to verify it is working.

401 - Adequate handwashing stations not available for employees [s. 21(4)]
Observation (CORRECTED DURING INSPECTION): HOT WATER valve for hand wash sink in the restroom was turned off.
Corrective Action(s): Hot water valve was turned back on at the request of the EHO. Proper hand hygiene in a food service establishment requires that you have hot/cold running water, liquid soap, and single-use paper towels in every hand wash station.

Observation (CORRECTED DURING INSPECTION): Dishwasher did not dispense any chlorine residual at time of inspection.
Corrective Action(s): Stock bottle changed. VERIFY that it is releasing 50 ppm chlorine residual at before using it for the day.

Comments

Routine inspection conducted. The following observations were made:
1. Temperatures
- Prep cooler originally at 7C, but returned to 4C at end of inspection after lid was closed
- Stand-up coolers (stainless steel / domestic) at 4C or less
- Beverage cooler and beer cooler at 4C or less
- Freezer unit of domestic cooler at approximately -11C, chest freezer at -18C. Stand-up freezer at -15C
- Temperature logs were maintained and up-to-date
- Various items were cooling at time of inspection - lamb curry (35-40C), meat stews (~30C). They will be transferred to shallow containers for placement into the walk-in cooler later
- Vat of rice prepared this morning was at 7C. Remember that rice, and all other potentially hazardous goods, need to be cooled from 60C to 20C in 2 hours, and from 20C to 4C in 4 hours.
- Ice wand present, but was not frozen. Reminder to have frozen ice wands (with water filled to the fill line) available at all times for adequate cooling. Be sure to wrap the ice wands in a food-grade freezer bag to protect it from contamination. Always store ice wands UPRIGHT in the freezer

2. Hygiene and Sanitizing
- Hand wash station stocked with hot/cold running water, liquid soap, and single-use paper towels at Front-Of-House, restrooms, and in kitchen
- Sanitizing pail reads at 200 ppm chlorine residual; bleach spray bottle also contains 200 ppm chlorine residual
- Ventilation canopy in good sanitary condition
- Low-temperature dishwasher managed to dispense 50 ppm after chlorine stock bottle replaced (see violation code 302, 308 above). You must maintain dishwasher logs - check the dishwasher at the beginning of the day and ensure that it reads at 50 ppm before you use it
- Customer restrooms in good sanitary condition

3. Storage
- Food items generally well organized
- Food-grade freezer bags and ziploc bags used to store frozen items for long-term storage - good. Ziploc bags are not re-used
- Chemicals kept separate from food products

4. Pests
- No visible signs of recent pest activity at time of inspection
- Back door securely shut
- Screen door present and intact for use in the summer

5. Administrative
- Permit posted and up-to-date
