Observation:
The raw meat display case's plastic, sliding doors are cracked and being held with tape. Tape and other glues are not food grade, durable, or cleanable. Bacteria/mould will grow in the cracks. This was mentioned in the previous inspection.
Corrective Action(s):
Immediately new sliding doors or have new, custom made platic sliding doors made to replace the all the damaged ones. Failure to do so, will result in the issuance of orders, tickets, and/or fines.

Comments

A routine inspection was completed:
- Coolers 4C or colder; freezers -21C or colder; and thermometers present.
- Bleach sanitizer in spray bottle (in butcher area) had [Cl2] of 200ppm. Add 1/2 tsp of bleach to 2 Litres (1/2 gallon) of water.
- Hand sink, in butcher area, had running hot and cold water, liquid soap and paper towels.
- All foods stored in 6" off the floor on racks and shelves.
- No expired foods in use or for sale. FIFO rules being followed.
- Bulk bins or self-serve units have been removed.
- Proper labelling found on repackaged foods.
- Bulk, non-perishable desserts are dispensed by staff in boxes. Supplier is "Minoo Bakery" on Glen Dr. in Coquitlam. Orders every 3 days.
- General sanitation level is good.
- No signs of pests. A monthly contract with a pest company is in place to monitor for pests.

ACTION
- Replace the broken plastic, sliding doors on the raw meat display cooler. This was required to be completed in May 2023.
- The meat band saw MUST be washed and sanitized at the end of each night. Do NOT allow any meat to remain on the saw and clean it in the morning, as the meat will attract flies and mice.
- Remove the mould in the corners and edges of the plastic sliding doors, on the raw meat display case. This occurs due to bulid up of condensation. Throughout the day, wipe away the condensation to prevent mould growth.
