Discussed dishwashing procedures with manager. Quats sanitizer is used to sanitize dishware before air drying

Note:
1. The practice for sanitizer now is fill sanitizer in spray bottle, check concentration, then use until empty (could take up to days). Concentration of sanitizer is only checked in the beginning but now later. Change sanitizer in spray bottle every other day to ensure concentration of 200ppm is achieved.
2. Ensure in-use tongs (especially ones for hot dogs, and hot foods) are washed and sanitized every 4 hours
