Observation (CORRECTED DURING INSPECTION): A large container of garlic butter was left on top of the hot holding unit. Internal food temperature was measured at 40C
Corrective Action(s): - Discarded the butter.
- Ensure that hot foods are held in hot holding unit at temperature greater than 60C

- Wash your dishware using manual ware washing method, fill one large pot with 100ppm sanitizer solution and sanitize all your dishware in that and let it air dry.

- area behind cookline

Observation: - Dishwahser is not working, measured 0ppm chlorine residual during final rinse cycle
- Front undercounter cooler unit is not working - measured at 8C
Corrective Action(s): - Call for the service of dishwasher, ensure it dispense atleast 50pm during final rinse cycle at the dish surface. Also, the drain for the dishwahser overflows as it runs, repair to ensure water drains properly
- Repair the undercounter cooler, ensure that the temperature is maintained at less than 4C
