Observation (CORRECTED DURING INSPECTION): Bowl of channa masala found stored ontop of the insert line. Temperature measured at 7C and it was stored here since last night according to operator.
Corrective Action(s): Discard channa masala. Ensure foods are not stored above the insert line as temperatures cannot be maintained 4C or below. Date to be corrected: today

Observation (CORRECTED DURING INSPECTION): 1) Ice machine has black mould growing on the top white panel inside where the ice bin is located. This needs to be cleaned off as the ice will be contaminated with mould.
2) Naan bread cloth is encrusted with flour debris. This bundled cloth item is not a cleanable surface and cannot be used for handling food items. You must use a material that is easily cleanable and food grade.
Corrective Action(s): 1) Clear out the ice bin and clean off the black mould and sanitize the area.
2) Discard and discontinue use of the bundled cloth.

Observation: 1) Ice buildup on the side of the walk-in freezer door. The door cannot close completely. This will stress out your cooler and cause it to break down faster.
2) Large ice buildup around the pipes in the walk in cooler.
Corrective Action(s): 1) Remove the ice so the door can close properly.
2) Remove the ice buildup in the walk in cooler. The water will drip slowly onto the floor and create puddles.

-Note: stainless steel bowl mixer is used for the dosa batter. This will be looked into further. Submit documentation regarding the equipment used for making dosas. Reminder all equipment must be smooth, durable, free of cracks, breaks, pits, chips, or any other imperfections. They must also be easily cleanable.
