√ Food up off floor ≥6”, good stock rotation noted, all product tagged/labeled for quick and accurate identification and traceability
√ Esan sanitizer available and tested regularly
√ Environmental sampling and water testing done regularly, nothing flagged by lab this year so far.
√ Three compartment sink fully stocked with soap, sanitizer and hot and cold running water
√ Equipment appears to be in good working order and in sanitary condition
√ General sanitation and maintenance is very good
√ No signs of pest infestation noted
√ Thermometers present
√ Temperature logs maintained and no issues with equipment have been noted
