Change of ownership effective February 1, 2016.
New owner has FOODSAFE 1 training. Received a copy of the certificate.
* Ensure to use D10 quats sanitizer from the dispenser in all sanitizer buckets.
* Raw frozen meats, poultry and seafood must be defrosted in the walk in cooler on bottom shelves.
* You must monitor and record dishwasher final rinse sanitizer and D10 sanitizer concentrations at least once a day.
* Provide shatter-proof light covers for light bulbs in both walk-in cooler and freezers.
* Repair the dipper well used for storing ice cream scoops.

Walk in cooler: 3.5 degrees C.
All line preparation coolers below 4 degrees C.
Upright coolers below 4 degrees C.
Hot holding of soups and gravies above 60 degrees C.
Dishwasher final rinse at 50 ppm chlorine.
