Observation (CORRECTED DURING INSPECTION): No sanitizer bottle was present in working area behind sweets/cakes display cooler.
Corrective Action(s): Sanitizer bottle filled with 200 ppm of quats sanitizer was placed in the working area. Area was cleaned and sanitized prior to re-use. Ensure that a sanitizer bottle is present in all food handling areas of the bakery.

Observation: 1. WARNING: Sewage backflow observed at time of inspection in floor drain in dry-storage corner of bakery. Backflow / raw sewage within 2m radius of drain and did not contact any food items or equipment.
2. Area underneath dry storage goods (flour) and prep cooler area are unsanitary, containing food debris and waste.
Corrective Action(s): 1. All food items and dry storage goods within the vicinity of the drain were removed. A plumber was requested by the assistant store manager: ETA 2 hours. MONITOR the drain and contact the health inspector immediately if there is another backflow incident. Follow-up inspection will occur in 2 hours' time.
2. Sweep and mop the aforementioned areas. Ensure that the floor remains in sanitary condition after each working day to reduce the chance of attracting pests.

Partial routine inspection conducted due to sewage backflow in middle of inspection.

Temperatures:
- Produce prep cooler: 4C
- Walk-in cooler: 3C
- Walk-in freezer: -19C
- Chest-freezer: -18C

- Quats sanitizer dispensed at 200 ppm
- 2 handwashing stations in bakery adequately stocked with hot/cold running water, liquid soap, and paper towels
- Utensils and knives in satisfactory sanitary condition

Note: Potwasher temperature was unable to be inspected, as it may have been a contributing factor to the sewage backflow. Use 3-compartment sink to clean, rinse, and sanitize food contact surfaces and equipment. I
