Comments

Note: Glassware washer not in use at time of inspection. No sanitizer available. Only use glassware washer when the sanitizer is 12.5ppm as measured using a test strip.
Main kitchen commercial dishwasher has a chlorine sanitizing rinse (50ppm measured).
Keep daily records for cooler temperatures and for dishwasher sanitizer levels.
Coolers are all at 4 C or colder.
Hand washing stations have liquid soap and paper towels in dispensers (kitchen, bar, and staff washroom).
Gloves are also being worn - change frequently and wash hands prior to use of gloves.
Hot holding - gravy, etc. is heated on the stove (quickly reheat to 74C) while hot holding unit is pre-heating to at least 60C.
Reviewed produce items to be washed. Any produce that is not pre-washed to be washed prior to use.
