Observation (CORRECTED DURING INSPECTION): - In use wiping cloths present on counter and on steaming wand without use of sanitizer
- Dishwasher not turned on at time of the inspection and staff reported dishwasher is only used at end of shift. Dishes are manually washed in 2 compartment sink.
Corrective Action(s): - Store in use wiping cloths in sanitizer to control microbial growth. A container was filled with quats sanitizer (200ppm) and wiping cloths placed in at time of inspection
- Dishwasher is to be used to wash and sanitize dishes in premises. While in operation, ensure dishwasher is turned on, available for use and used for washing and sanitizing dishes. Dishwasher was turned on at time of the inspection and once heated, met required sanitizing temperature.

Observation (CORRECTED DURING INSPECTION): - Bags of flour and sugar stored directly on the floor
Corrective Action(s): - Store all food items on a minimum of 15cm (6 inches) off of the floor. Items were put on shelving at time of the inspection.

Observation: - Accumulation of dust present around areas in ceiling where exhaust fans are located in front and back food preparation areas

- Thoroughly clean floor under/behind combi ovens

Observation: - Operator arrived part way through inspection. Operator does not have valid Foodsafe level 1 certificate. Expired May 2019. This was noted on previous routine inspection.
Corrective Action(s): - Register and complete Foodsafe level 1. Provide confirmation of completion to EHO. To be completed by:31-Aug-2022

502 - In operator’s absence, no staff on duty has FOODSAFE Level 1 or equivalent [s. 10(2)]
Observation: Operator not initially present and 2 staff members which were present did not have valid Foodsafe level 1 certificates.
One staff member has certificate which expired Apr 2021. One staff member indicated they would be registering for a course next week.
Corrective Action(s): - Ensure adequate number of staff have completed to Foodsafe level 1 to ensure requirement of 1 staff member present with Foodsafe level 1 in the Operator's absence. Provide confirmation of registration for staff members to complete Foodsafe level 1. To be corrected: 10-Aug-2022

Comments

Handsinks in front service area and back prep/dishwashing area supplied with hot and cold running water, liquid soap and paper towel
- Coolers operating at acceptable temperatures (4C or colder):
- 2 door under counter cooler 4C
- Display cooler 2C
- 2 door reach in cooler (back) 3C
- Freezers maintaining product in a frozen state
- Chest freezer -29CC
- 2 door undercounter freezer -18C
- Quats surface sanitizer present from dispenser at 2 compartment sink. Concentration measured 200ppm. [As noted violation above, in use wiping cloths within food preparation areas, not kept in sanitizer solution - corrected during inspection]
- Pre-mix no rinse quats sanitizer present in spray bottle used for customer tables. Concentration measured 200ppm
- Ice machine appears clean/maintained. Scoop stored in sanitary manner outside of ice bin.
- As noted in above violation, dishwasher was not initially in use. Once turned on and heated, dishwasher was operational and met sanitizing temperature. Final rinse measured 71 C at dish surface.
- No signs of pest activity noted at the time of the inspection.

Observations and required corrective actions reviewed with Operator and a copy of the report was provided.
