302 - Equipment/utensils/food contact surfaces not properly washed and sanitized [s. 17(2)]
Observation (CORRECTED DURING INSPECTION): Sanitizer bottles noted broken and no sanitizer was available. QUAT sanitizer dispenser over 3-comp sink does not work and dispenser hoses are not installed properly. there is another QUAT dispenser at the mop sink. Operator provided sanitizer in container as a temprary measure until the main dispenser is repaired.
Corrective Action(s):
- Provide proper spray bottles for QUAT sanitizer. Ensure one spray is avaialbe in the pizza line to sanitize counters.
- Ensure to fill up 3- comp sink with proper QUAT sanitizer when sanitizing pans,toungues, boards and trays. Ensure cheese slicer is washed and sanitized properly in the sink.
- Repair and properly setup QUAT sanitizer dispenser for use at the 3-comp sink. Ensure chemicals are available and saitizer is dispensed with proper concentration.

209 - Food not protected from contamination [s. 12(a)]
Observation: Pizza prep cooler has been moved to front. This unit has open top and food stored in insert. The unit now is extended beyond existing drop ceiling tiles and food is exposed to potential dust from the main ceiling. The new location of the cooler has not been approved.
Corrective Action(s): Extend ceiling or provide poper coverage over the food inserts and prep counter for pizza. Protect the food from potential contamination from above. Ensure cooler lid remains closed.
New floor plan and alteration proposal are to be submitted for review and approval to Fraser Health.

Observation: Major changes noted in the facility. Pizza prep cooler moved to a new location right in front counter. A pop cooler placed next to a hand washing station with a divider close to hand sink which obstruct proper usage of hand washing station. A new dough/ veggie counter was installed at the location of pizza prep cooler. This prep counter does have a temporary plastic cover countertop.
Custome washroom entrance has been changed towards exit door. Wash room door opens to dining area with No self-closing system.
Corrective Action(s): Submit new floor plans and information regarding changes for health department review and approval.
Free up space at the hand sink so that staff can do adequate hand washing.
Contact your area health inspector to discuss requirements.

- Coolers measured at or below 4C. Walk in freezer measured at or below -18C. Temperature monitoring log maintained and kept updated.
- Hand washing station and alternative discussed.
- Sanitizer QUAT 200-400 ppm available. See violation notes above.
- General sanitation is satisfactory. No pest activity noted at this date.
