New menu
sanitation plan
Reviewed donair kebab processing steps. After preparation, ensure chicken is frozen first before placed on the rotating vertical boiler. Donair kebab menu is approved. Walk-in cooler and other coolers were at or below 4 degrees C.
Freezers were at or below -18 degrees C.
Foods in hot holding unit were at >70 degrees C.
General sanitation is adequate.
hand washing stations are fully equipped with hot and cold running water, liquid soap and paper towel.
Bleach sanitizer was measured at >50 ppm for 3 compartment sinks manual dishwashing.
QUATS sanitizer in the was measured at 200 ppm.
