The facility produce rations and prepackaged water for emergency kits. Both are given 5 years expiry dates.
General sanitation of the processing rooms is good. No obvious signs of pest noted.
Handwashing stations are satisfactory.
Workers' hygiene appears satisfactory.
Please ensure pails and food contact surfaces are wash first with detergent and water, rinsed with water, then followed by sanitizing with a bleach solution (1tbsp bleach per gallon water). Allow to air dry. Do not mix detergent with bleach.
Food equipment that are to be clean in place should follow procedure from the manufacturer for cleaning. Generally, food contact surfaces should be cleaned of physical soils, then rinsed and sanitized.
Recommend- 1) Verifying that the food meal bar product has been baked to a minimum temperature of 165F/74C. Test with a food probe thermometer after baking.
- 2) Verifying that the appropriate ozone level is achieved in the finished water by testing with an ozone test kit (at least daily).
Record the reading on a log sheet.
-3) Verifying the sanitizing solution for cleaning food contact surfaces with test strips.
