Observation: 1. Plastic storage bins for sauces in walk in cooler are not food grade. Food grade containers are required for storage of food.
2. News paper used as shelf lining on drying rack. The news paper will become contaminated and become mouldy.
Corrective Action(s): Ensure storage units and surfaces are food grade materials. Use food grade plastic containers like Rubbermaid or surfaces like stainless steel pans or good grade plastic trays. Correction required this week.
